The brewing of wine is a complicated process, and wine making is a technique and an art. Let’s talk about the beer brewing process
1. Smash. Although pulverization is a simple mechanical process, the degree of pulverization is very important to the biochemical changes of saccharification, the composition of wort, the filtration rate of wort and the utilization rate of raw materials.
2. Saccharification and gelatinization. After the rice is crushed, it is added to the gelatinization pot. At a certain temperature, the starch swells and splits in the water to form a uniform paste solution to form a completely liquefied mash, which is then added to the saccharification pot for saccharification together with malt. The enzyme of malt itself hydrolyzes the starch in malt and rice into sugars such as maltose, and breaks down protein into nutrients such as amino acids that can be easily fermented by yeast.
3. Filter. After the saccharification is finished, the mashed mash is pumped to the filter to separate the wort and maltose to obtain a clarified wort.
4. Boil and cool. The wort is transported to the wort boiling pot, and hops are added and heated and boiled for more than 1 hour. The composition of the wort is stable and the aroma, bitterness and various effective ingredients of the hops are dissolved in the wort. Then enter the cooler to cool.
5. Fermentation. After the wort has been cooled, brewer's yeast and sterile air are added, transported to the fermentation tank, and fermentation begins.
6. Filter. After the fermentation broth matures, it is centrifuged and multiple filtered to remove yeast and macromolecular proteins in the fermentation broth to become crystal clear and clear alcohol, and then pasteurize the mature beer before it can be canned.
